Recipe for scrambled eggs with truffles
Preparation time: 15 minutes
Cooking time: 5 – 10 minutes
Ingredients (serves 6):
- 12 eggs
- Olive oil
- 1 truffle
First, crack the eggs and beat them with salt, milled black pepper and milk. Grate the truffle using a mandolin and put to one side.
Drizzle some olive oil into a pan and heat. When the oil is hot, pour in the egg mixture and stir regularly (as for making scrambled eggs). After 2 minutes, add the grated truffles and continue to cook until you have the desired consistency.
In Provence, this dish is served with relatively runny eggs.
