The Markets of Provence

It has to be said... the markets of Provence are quite simply a feast for the senses! Exhaling scents of thyme and rosemary, and with stalls piled high with sun-blessed tomatoes, courgettes and sweet peppers, they have everything you need to concoct a delicious ratatouille for lunch, accompanied by sea bass or sea bream from the local fish markets. For the aperitif, delight your guests with some "cade" chickpea pancake and a few olives, before moving on to some Petit Violet artichokes for your starter. And for dessert, nothing can beat the sweet and luscious taste of the Solliès fig! Not forgetting a big bunch of fresh flowers to decorate the table... The Var's village squares are the stage for a host of farmers' and organic markets.
